When I tell people that I am vegan, or “plant based” as I am learning, the first question that everyone asks is, “What do you eat?!” ?
This is an understandable question, because the perception of someone following a vegan diet is someone that eats lettuce and raw broccoli only and has no yummy or filling food, basically ever.
So, I decided to share what a basic day in vegan food looks like for me. Just to prove that:
1. Vegan food can be BOMB even if you do eat meat
2. You don’t have to be a gourmet chef to be vegan and eat at home.
3. You don’t have to be a millionaire to be vegan – you can do it for actually pretty cheap!
4. You can still feel satisfied, full, and have nutritious food that doesn’t come from animals!
I just want to clarify I am NOT a nutritionist, and if you are considering a vegan diet, do the research! It won’t take long for you to get the hang of what you need and to cut out what you don’t!

This Granola bowl I would eat for all 3 meals if I could. ? Like really. It tastes like the most delicious cereal you can buy, but with some actual substance that will keep you full for hours. Its sweet and salty and crunchy and…. Wait for it….. GOOD FOR YOU!
Ingredients:
– ½ Cup Hemp Plus Granola (from the bulk section in the grocery store)
– ½ Cup Strawberry Vanilla Granola (also from the bulk section)
– 1 Spoonful of natural peanutbutter (No sugar added is best!)
– 1 whole banana chopped
– Unsweetened Original Almond Milk (as much as you want!)
Preparation:
Pour both granolas in the bowl, cover with chooped banana, add the peanutbutter, and pour over almond milk. BOOM. DONE. YUM.
I like this for breakfast because it keeps me full all day. The Hemp in the granola has a ton of protein, and the almond milk is full of calcium. (More than regular milk – but I won’t get into that can of worms right now LOL) And peanut butter… It adds extra protein and it just tastes bomb.
My favorite vegan snacks I ALWAYS have in the house (Or let’s be real – in my purse – I get hungry ok) are…
– Hummus and pita chips
– Hummus and carrots
– Hummus and pretzels
– Hummus
– Grapes
– SkinnyPop Popcorn
– Almonds
Yes I said Hummus 4 times… because I’m 100% a Hummusexual. (I’ve used this joke in real life like 12 times and no one laughs anymore because I’ve used it 12 times…) ? But for real. Hummus is just mashed up chickpeas, and chickpeas are another amazing source of protein, and a natural anti-inflammatory, score.

Mexican food is a vegan’s best friend. Tacos, specifically, are my best friend. These are filled with so much yum and so much nutrients. Have a taco night and love your life.
Ingredients:
– 1 cup quinoa
– ½ cup black beans
– sautéed mushrooms
– sautéed broccoli
– avocado
– whole wheat tortilla
– hot sauce
Preparation: Toss all the ingredients in a tortilla. It really is as easy as that!
(that is indeed a sub label to a Nick Jonas song).

A good veggie burger is my favorite way to just go all out. Do you ever just have those moods where you wanna grub out and be just STUFFED at the end of a meal and love every second of it?? Same. This is what I always go to. I discovered Hilary’s veggie burgers pretty recently and they have become my ultimate faves! If you like your veggie burgers to taste like actual meat, I recommend original Vegan Boca burgers. They are super yummy and taste like beef! BUT for me I like my veggie burgers to taste like veggies. Hilary’s is made of chickpeas (oh chickpeas – you so versatile!) and other yummy veggies like carrots and edamame. Here’s how I make it a grubber.
– 1 Hilary’s original veggie burger
– 1 sesame seed white bun
– Arugula (I love how its like lettuce – but spicy)
– ½ Avocado
– Ketchup
– Cholula Hot Sauce
– Vegan Bacon (Smartlife is my fav brand)
Preparation:
I like to cook my vegan bacon in a skillet – it makes me feel legit. I spray the pan with a cooking spray and just slap em on until they are hot and crispy. The burger I like to cook in the toaster oven so it’s crispy too! Once those items are both hot and crispy, you cut up the avocado and assemble as you wish. Add as much or as little of anything you want. Then enjoy your vegan bacon burger. Cheers to the Netflix you will be watching on that full belly in about 30 minutes. ?
